Guacamole might be the most famous Mexican dish in the world — and also the most often done wrong. No peas, no sour cream, no mystery green goo from a tub. Real guacamole is simple, fresh, and best made minutes before you eat it. Here's how we do it.

The molcajete makes the difference

Traditional guacamole is made in a molcajete, the volcanic-stone mortar that's been used in Mexico for thousands of years. Grinding the aromatics into a paste first releases far more flavor than chopping — and the rough stone gives the avocado the perfect chunky texture.

Choosing the avocado

Everything starts with ripe Hass avocados. They should yield to gentle pressure but not feel mushy. Mexico grows some of the best in the world — when they're in peak season, you barely need anything else.

Guacamole has only a handful of ingredients, so each one has to be perfect.

The authentic recipe

Ingredients (serves 4)

  • 3 ripe Hass avocados
  • ½ white onion, finely diced
  • 1 Roma tomato, diced
  • 1–2 serrano chiles, minced (to taste)
  • A handful of fresh cilantro, chopped
  • Juice of 1–2 limes
  • Salt

Method

  • Grind a little onion, chile, cilantro and salt into a paste in the molcajete
  • Add the avocado and mash — keep it chunky, not smooth
  • Fold in the rest of the onion, tomato, cilantro and lime juice
  • Taste, adjust salt and lime, and serve right away with warm totopos

Pro tips

  • Salt and lime last: season at the end so you can balance to taste
  • Keep it chunky: texture is part of the pleasure — don't purée it
  • Serve immediately: guacamole is at its best within minutes; the lime helps slow browning
  • Make it your own: a little roasted chile, pomegranate or crumbled queso adds a beautiful twist
Did you know? The word guacamole comes from the Nahuatl āhuacamolli — "avocado sauce." It's been made in Mexico since the time of the Aztecs.
